Organic Pearled Farro
Gently polished spelled-berries to used like rice. A tender grain perfect for soups, grain pilaf, and salads. Farro is the Italian name for ‘hulled’ wheat. The ancient strains of hulled wheat include spelt, emmer, and einkorn. These grains have a husky “hull” that must be removed to get the edible kernel on the inside. Farro “perlato”, refers to pearled wheat, whereby the tough bran coat has been polished to let water in during cooking and create a tender bite.
Organic Whole Spelt Flour
One of the ancient hulled wheats, spelt is a principal grain used in Germany and Switzerland. It is nutrient-dense with a sweet aroma. A protein level of 11% means that this spelt is excellent in bread and all-purpose applications. This variety is called Oberkulmer. Use as you would wheat flour.
Organic Sifted Wheat Flour
Stone ground and lightly sifted to produce an all-purpose baking flour that is lighter than 100% whole wheat flour. Sifting removes some bran, leaving 86% of the kernel and nutritious germ and oils in the flour. Use as you would all-purpose flour, adding extra hydration in your recipe as needed.
