Cooking Kit - Braised Beef Stew
A family favorite! Kids love to sop up the juices of this hearty, delicious stew with slices of crusty sourdough bread.
Cooking Kit includes: Free Range Beef Stew Meat, 2 lbs / Organic Heirloom Yellow Onion / Organic Carrots / Organic Swiss Chard, harvested from our schools farm / Organic Garlic / Organic Crimini Mushrooms / Bionaturae Organic Diced Tomatoes
2 lbs stew meat
Kosher salt and freshly ground pepper
1 Tbsp extra virgin olive oil
1 yellow onion, diced
2 carrots, peeled and cut into 1 inch chunks
1 pound swiss chard, stems removed, leaves chopped into 1 inch pieces
2 large cloves garlic
6 oz cremini mushrooms, trimmed and halved
1 cup dry red wine
1 cup canned diced tomatoes with their juice
1 bay leaf
1 tsp chopped fresh thyme
Preheat the oven to 350 degrees. Season the stew meat well with salt and pepper.
Heat a Dutch oven or similar heavy pot with a tight lid over medium-high heat and add the oil. When the oil is hot, add the beef and sear on all sides until well browned, about 8 minutes.
Add the onion, carrots, garlic and mushrooms and cook, stirring often, until the vegetables are lightly colored, about 5 minutes. Add the wine, bring to a boil, and cook for 5 minutes to reduce slightly. Add the tomatoes, swiss chard, bay leaf, and thyme and return to a boil. Cover tightly, transfer to the oven, and cook until the meat is tender when pierced with a fork, about 1 ½ hours.
Taste and adjust the seasoning with salt and pepper. Serve directly from the pot.
