Cooking Kit - Free Range Chicken + Organic Arugula Cacio e Pepe

Cooking Kit includes: Delverde Linguine Fini, 1 lb, Organic Pecorino Romano, 1 lb, Organic Arugula, harvested from our Schools Farm, Free Range Chicken Thighs, 1 lb 

1 lb Delverde Linguine Fini with Spring Water
2 tablespoons butter
2 cups grated pecorino romano 
4 cups organic baby arugula
2 cups diced warm chicken

Cook bucatini or spaghetti in boiling salted water until al dente. Drain, reserving 1 1/4 cups cooking water.

Meanwhile, cook 2 teaspoons freshly ground black pepper in butter in a large Dutch oven over medium-high heat until fragrant, about 1 minute. Add 3/4 cup pasta water and bring to a simmer.
Reduce heat to low and stir in hot pasta and grated pecorino romano, stirring constantly until cheese is melted (add more pasta water if sauce seems dry).
Fold in baby arugula and warm chicken, tossing until arugula is just wilted. Serve immediately topped with additional percorino romano and black pepper.
